The Easiest Mushroom Recipe Yet!

I love mushrooms of all kinds, but white button mushrooms has always my least favourite variation since it is quite dull in flavour. Hence, I had no clue what to do with them and so I had to do an online search to get my creative juices running.

Luckily, I quickly found a recipe that I wanted to try, Mushrooms with a Soy Sauce Glaze. The recipe has been reviewed by nearly 100 individuals and has gotten a solid 5-star rating so this certainly seemed like a promising recipe.

And it was! The dish turned out super flavourful. The recipe called for only 5 ingredients and 2 simple cooking steps, but it managed to develop very scrumptious flavours (especially consider the boring taste of plain white button mushrooms). The simple soy sauce glaze really helped to bring out the umami flavour of mushrooms and the mushrooms were cooked just right — meaty and juicy. It was delicious! I kept eating one bite after another and practically had to fight my brother for the last few slices.

I followed the recipe almost to the letter. Just at the end, though, I added in a drizzle of sesame oil to enhance the aroma even further.

Mushrooms with Sesame-Soy Glaze

Adapted from Mushrooms with a Soy Sauce Glaze

Ingredients:

  • 1 lb white button mushrooms, rinsed and sliced
  • 1 small knob of ginger, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon low-sodium soy sauce
  • Cooking spray
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste

Directions:

  • Heat a saute pan on medium heat. Spray pan with cooking spray and pour in mushrooms. Saute until mushrooms are softened, stirring occasionally (should take about 5 – 7 minutes).
  • When mushrooms are softened and have released their juices, continue cooking on medium heat until juices have been reduced by about half. Then, stir in garlic and sauté until fragrant.
  • Drizzle in soy sauce and continue to sauté until liquid has evapourated.
  • Before serving, drizzle in sesame oil and season with salt and pepper to taste.

Mushrooms are very low in calories, and yet they are loaded with many good-for-you nutrients, namely the energy-producing B vitamins and the phytochemicals which have potent antioxidant and anticancer properties.  So, don’t be afraid to take big bites!
