- 2 slices whole-grain bread
- 1 medium egg
- 1/2 ripe avocado
- 2 to 3 ounces gouda cheese
- 2 tbsp spicy sauce (or more if you want it hotter)1
- 2 pats salted butter
- To begin, boil the egg. Cook for 8 minutes, then shock the egg in freezing water and peel quickly if you want it properly cooked.
- After you’ve made your egg, slice the avocado and begin stacking. Layer half of the gouda cheese, half of the sliced avocado, half of the smashed egg, a sprinkle of spicy sauce, the remaining cheese, and finally the second piece of toast. Set aside the sandwich with butter on both sides.
- Place the buttered sandwich in a cast-iron skillet or panini press and cook until the outside is crispy and golden and the inside is melty and delicious.
