  1. 2 slices whole-grain bread
  2. 1 medium egg
  3. 1/2 ripe avocado
  4. 2 to 3 ounces gouda cheese
  5. 2 tbsp spicy sauce (or more if you want it hotter)1
  6. 2 pats salted butter

  1. To begin, boil the egg. Cook for 8 minutes, then shock the egg in freezing water and peel quickly if you want it properly cooked.
  2. After you’ve made your egg, slice the avocado and begin stacking. Layer half of the gouda cheese, half of the sliced avocado, half of the smashed egg, a sprinkle of spicy sauce, the remaining cheese, and finally the second piece of toast. Set aside the sandwich with butter on both sides.
  3. Place the buttered sandwich in a cast-iron skillet or panini press and cook until the outside is crispy and golden and the inside is melty and delicious.
  4. Allow to firm up for a few minutes before serving.
