2.
First, soak 1 cup of rice for 4 hours. Then grind it into a smooth batter. Add 1/4 cup of yogurt, 1 tsp of ginger paste, 1 tsp of green chili paste, and salt to taste.
3.
Mix well and let it ferment for 6-8 hours. Once fermented, add 1 tsp of fruit salt and mix gently. Pour the batter into a greased pan and steam for 15 minutes.
4.
Meanwhile, prepare the tempering. Heat 1 tbsp of oil in a pan and add 1 tsp of mustard seeds, 1 tsp of sesame seeds, 1 tsp of cumin seeds, and a pinch of asafoetida.
5.
Once the mustard seeds start to crackle, add 1 tsp of sugar and 1/4 cup of water. Let it simmer for a minute and turn off the heat.
6.
After 15 minutes, check if the dhokla is cooked by inserting a toothpick. If it comes out clean, it's ready. Pour the tempering over the dhokla and let it soak for 5 minutes.
7.
Gently remove the dhokla from the pan and cut it into desired shapes. Garnish with chopped coriander leaves and grated coconut.
