  3. 1 tbsp oil
  4. Salt & pepper to taste
  5. 4 slices mozzarella
  6. 4 tbsp jarred sun dried tomatoes
  7. 2 avocados, pitted and sliced
  8. Rye, or your choice of bread
  9. Butter (optional)

  1. Heat the oil in a pan over medium heat.
  2. Place the chicken breasts in a basin after washing and slicing them in half.
  3. Mix in the pesto, salt, and pepper until everything is uniformly covered.
  4. Cook the chicken for 3-5 minutes each side, covered, until no longer pink.
  5. Meanwhile, toast the bread in a toaster or broil on the lowest heat in the oven for 1-2 minutes on each side.
  6. Optional: add butter to toast.


  1. Spread (half) sliced avocado, 2 halves chicken, 1 piece mozzarella, and 1 tbsp sun dried tomatoes over toast.
  2. Optional: Return the sandwich to the pan, covered, over medium heat for 30 seconds, or until the cheese has melted. To serve, cut into halves or quarters and attach with a toothpick.
